Kohakutou Crystal Candy

The first time I made Kohakutou was back in 2019 when it went viral ALL OVER the internet.

Dating back to the Edo Period in Ancient Japan, these jellies were traditionally served in tea ceremonies.

Kohakutou translates to Amber sugar and is made from water, sugar and agar.

When first made, the jellies are like soft edible crystals. Once they have had time to crystallise, they have an amazing jelly centre and an irresistible crunchy outer shell. They are absolutely delicious!

Kohakutou is vegan and gluten free however they are made in a kitchen that handles flour so they may contain traces.

The best way to store your treats is at loosely covered room temperature. Open the bag!

If you like them extra crunchy, remove them from their packaging and leave them out to continue crystallising for a few days
